This experiential program will prepare students for a career as a Chef with an understanding of local food source harvesting and processing. Entrenched in cultures of the West Coast and with a focus on food source to table curriculum, this program engages students in the kitchen and on the land. Students learn from experienced Red Seal Chefs in our modern CMTN kitchen as well as those who hold extensive cultural knowledge.
